Coffee with Candi 10-19-2018

(Last Updated On: October 18, 2018)

Welcome to Coffee with Candi, a time for us to have a chat every week on Friday and catch up.

Well, I’ll have a chat with you about my week…what’s been happening, the good the bad the exciting, the boring…most importantly, what have I learned about life, my family, my friends, work, health, looking my best…I’ll spill it honestly and openly with you. Always with a fresh cup of hot, black coffee in my hand. I think better with java in my paw.

And, I’ll share one special thing that has brightened up my week, so it can potentially make you smile, too. It might be a new gadget, a piece of furniture, a nifty clothing find, a recipe, or something to make your life easier. It’s my gift to you that will keep on giving. 🙂

What’s on my mind this week:

in no particular order…however the thoughts came into my little head

Candi Randolph Inspire My Style

Coffee with Candi Inspire My StyleI’m really enjoying my Autumn inspired Facebook posts, (here’s another one) but I gotta tell ya’ it’s been hot, hot, hot in my neck of the woods. Humid, too. Of course I will never complain about the heat, especially since I’m planning to move back to the frigid Midwest soon! And, sweating is good for you, it is kind of like a sauna and helps you lose weight. 🙂

Coffee with Candi Inspire My StyleRecently I wrote a post about changes in midlife, specifically my decision to move from Florida back to Michigan. In that post I recommended several things that should be top priority for someone making a move like this, my Long Distance Relocation Tips. I’m pleased to report that I have actually put into action those very tips, and am feeling pretty good about it at the moment!

1. I am in the process of preparing my home for sale, and it is almost ready. My home will be sold turnkey, meaning everything in it will go with the sale, right down to the silverware and towels.

2. I’ve been scouting around online, looking at potential property in MI that appeals to me, and my budget. Yesterday I hooked up with a realtor that I’ve known for years, so he is sending me listings. It is so important to have a local source when you’re relocating long distance.

3. After searching and considering a number of options for moving the belongings that will travel with me, I found a company that meets all of my needs and is reasonably priced. So I was able to check that box, too, and feel really good that I have a plan in place!

4. And finally, a huge factor in this process was taken care of, and that is obtaining a mortgage pre-approval for my new purchase. I am self employed so moving to a new state brought some concerns about whether or not I would qualify for a mortgage. It was important to me (and it should be to anyone making a move of this nature) to know what I was dealing with. Would I have to rent for a year or so until I was re-established in Michigan….or would I qualify for a mortgage now?

I’m thrilled to say that I have been pre-approved, and as soon as my Florida home is under contract I can confidently begin the search in earnest for a new home in Michigan.

I followed my own advice and it has worked out very well. I must know what I’m talking about! 🙂

One Special Thing – Chocolate Cake Protein Donut Holes

chocolate cake protein donut holes

If you are following an eating plan that is high in protein and low in carbs, you might want to take note of this recipe. I tried it the other day and was very impressed! Of course, I’m always looking for something to satisfy my sweet tooth that is not going to take me too far off track.

My eating plan generally follows a high protein, lower carb theme. I find that it helps keep the belly fat/belly bloat under control.

These little guys are actually donut holes, although I’ll be the first to admit that mine look a bit rumpled. The circles are far less than perfect, but it didn’t affect the taste!

This recipe calls for some ingredients that you may have already if you’re eating high protein/low carbcoconut flour, protein powder, greek yogurt, Swerve confectioners sugar + a few other ingredients.

It is very simple to make. The only change I made from the recipe was that I had to bake my donut holes longer than indicated. The recipe calls for baking time of 8 to 10 minutes. I baked mine for 13 minutes and could have given them a couple more, so I would say 13 to 15 minutes.

Be sure to cool the donut holes completely before rolling them in the Swerve (or regular) powdered sugar, so it doesn’t absorb into the donut hole. And, store them carefully. I put mine in the frig to keep them firm.

These little treats are mighty tasty, and have 58 calories, 1.5 g fat, 9 g carbs, and 5.5 g protein. One recipe makes 8 donuts. I found them on MasonFit.com. His donut holes are much prettier than mine, too. See for yourself!
