Tasty Almond Bread

Enjoy a simple almond bread that is tasty and easy to prepare. It is prepared in a loaf pan but note that it does not rise to the top. Your slices will be smaller but can still be toasted, eaten plain, with toppings, or however you like!

  • Total Time: 40 minutes
  • Yield: 1 loaf - 12 servings 1x

1 cup almond flour

1/4 cup coconut flour

2 1/2 tsp baking powder

1/4 cup Monk fruit sweetener (or sweetener of choice)

3 tbsp psyllium husk powder

4 eggs

1/4 cup melted coconut oil or butter

1/4 cup warm water

Optional: chopped nuts or seeds as a topping

1. Preheat the oven to 350°F and grease well or line a 8×4 inch loaf pan with parchment paper, letting the paper come up over the edges.

2. Put all the dry ingredients, except for the seeds and nuts, in a bowl. Mix well.

3. Add the wet ingredients to the dry ingredients and mix well.

4. Place dough in the prepared loaf pan and top with seeds or nuts, if desired.

5. Bake for about 30 minutes or until golden brown.

6. Let bread cool on a wire rack for at least 30 minutes. Lift bread from the loaf pan by pulling up on the parchment paper. Slice and enjoy!

If you don’t want a sweeter taste to the bread, omit the Monk fruit sweetener. You can also add 1/2 teaspoon of almond extract to enhance the almond flavor.
